I really don't want to make a weak Witcher. I've got two sets of three dedicated to sword skills with one slot for a 24hr health regen on eating food, 1 set of three on signs mainly for quen and one on alchemy, and that seems to work for me.

That seems to be part of the main lore behind what a Witcher does. Where this breaks down is the constant menu fiddling to actually achieve this.
IMO its the one glaring flaw in an otherwise unbeatable game. However I prefer the way the skill system works in that game even though its more MMO'y, it works because it gets out of the players way.
